Almond Flour Cookies

Ingredients:

3 cups almond flour

1 tsp baking soda

1/4 tsp sea salt

1/4 cup extra-virgin organic coconut oil, melted

1/4 cup pure maple syrup or raw honey

1 large egg

2 large egg whites (1/4 cup)

1 tsp pure vanilla

1/2 cup semi sweet (or dark) chocolate chips

Directions:

  1. Preheat oven to 375 degrees F.

  2. Line baking sheets with parchment paper and set aside.

  3. Combine almond flour, baking soda, and salt in a medium bowl; mix well. Set aside.

  4. Beat oil and maple syrup in a large mixer bowl until creamy. This will take a while, but after 4-5 minutes, the mixture will get thick and creamy in appearance and texture.

  5. Add egg, egg whites, and extract; beat for additional 2 minutes.

  6. Add flour mixture to egg mixture until blended.

  7. Add chocolate chips.

  8. Drop by rounded tablespoon onto prepared baking sheet. Flatten cookies with a spatula and then bake for 14-16 minutes, until golden brown.

  9. Store in airtight container.

Serves 26; each cookie is 1.5 yellow containers
